Lemon + Herbs Revithia (Chickpeas)

From Kipos: Bay Leaves & Greek Herb Ring.


Growing on a small laurel tree, bay leaves are subtle yet add so much depth to soups, stews, and braised dishes.

The herb ring used for this recipe has Greek oregano, rosemary, and lemon thyme.


Nerd Note on the Bay Leaf

In ancient times, branches of the laurel tree were woven into crowns and worn on the heads of victors to signify triumph and success. It is the eternal symbol of victory.


Bay Leaf Taste

Bay leaves have an aromatic, tea-like flavor that doesn't overpower a recipe, but does add depth with subtle notes of mint or eucalyptus at the start of cooking, moving more towards thyme and oregano after a longer simmer.

Some of my favorite ways to use bay leaves are in Kapama (Greek recipe of chicken or beef braised in a rich tomato sauce with peas), revithia (chickpeas), or my mom's Garden Vegetable Soup.


This chickpea recipe below is easily made vegan, hearty, and freezer-friendly to make in large batches!

 

Ingredients

  • 1 large red onion

  • 2 small celery bundles

  • 1-2 large carrot(s)

  • Garlic cloves (to taste)

  • 1 Kipos Greek Herb Ring (Greek oregano, rosemary, lemon thyme)

  • 1 Kipos Bay Leaf

  • 14 oz cans of chickpeas (can add more if you'd like!)

  • 3 cups of stock (vegetable or chicken)

  • bundle of hearty greens (Swiss chard, kale, or horta)

  • 2 medium lemons, juiced

  • fresh parsley

  • Olive Oil

  • Salt & pepper (to taste)

Step 1: The base

Sauté diced onion, celery, and carrot in a bit of olive oil on medium heat until onion is a bit translucent. The veggies do not need to be fully cooked quite yet, but should start to get heated through. Add minced garlic cloves along with a bit of salt and pepper (unless you're using a pre-salted broth) and continue cooking for no more than 5 minutes.


Step 2: Mix it all in

Add chickpeas and broth, stirring continually as it heats through. Once it begins to simmer, add Kipos Greek Herb Ring and Kipos bay leaf. Let the soup simmer for at least 30 minutes or up to 1-2 hours. The longer you simmer with the herb ring and bay leaf, the deeper the flavors in the broth. In last 30 minutes or less of simmering, add the greens and mix in as they begin to wilt down.


If using dried chickpeas, make sure to soak them from overnight and simmer a bit longer at this step (might take up to 2 hours).


Step 3: Serve + Enjoy!

Remove herb ring and bay leaf before serving. Add a drizzle of olive oil and a pinch of fresh parsley to each bowl. Serves well with crusty bread, feta, and Kalamata olives.
